Slice 1 red onion thinky. Place in a bowl and toss with 2 tbsp red wine vinegar and a pinch of salt. |
Slice 1 pint cherry tomatoes in half and add to bowl. Mix together, marinate for 10 minutes.
Meanwhile, use a vegetable peeler to make ribbons out of 1 medium zucchini.
Remove tomatoes and onions, reserving the liquid. In a large bowl, mix zucchini, tomatoes, and onion with 6 cups arugula. Toss with 1 tbsp of the marinade and 1 tbsp olive oil. Shave 2oz asiago cheese on top and serve.
