1 lb dried beans = 5-6 cups of cooked beans |
Sort and rinse beans
Soak (6 cups water / 1 lb beans)
Soak overnight or do a quick soak (boil beans and water for two minutes, remove from heat, cover, let stand for one hour)
Cook by simmering beans for 1-2 hours. Season with salt, a tsp of sugar and either salt pork or olive oil.
