6-8 large | tomatoes, cores and chopped |
1 | green bell pepper, seeded and chopped |
1 large | red onion, chopped |
1 large | cucumber, seeded and chopped |
2-3 | jalapeño chilies, seeded and finley chopped |
1 bunch | fresh cilantro, finley chopped |
1/4 - 1/2 cup | lime juice |
Salt, to taste |
Combine the tomatoes, bell pepper, onion, cucumber , jalapeño chilies, cilantro and lime juice in a bowl. Season with salt. Add additional lime juice and jalapeño, if desired.
Serve wih corn chips or use as a condiment with tacos, eggs or grilled meat an dish.
Refrigerate any leftovers
