Pico de gallo

    6-8 large  tomatoes, cores and chopped
    1  green bell pepper, seeded and chopped
    1 large  red onion, chopped
    1 large  cucumber, seeded and chopped
    2-3  jalapeño chilies, seeded and finley chopped
    1 bunch  fresh cilantro, finley chopped
    1/4 - 1/2 cup  lime juice
      Salt, to taste

Combine the tomatoes, bell pepper, onion, cucumber , jalapeño chilies, cilantro and lime juice in a bowl. Season with salt. Add additional lime juice and jalapeño, if desired.
Serve wih corn chips or use as a condiment with tacos, eggs or grilled meat an dish.
Refrigerate any leftovers
