Roasted Pork Tenderloin

Ingredients | |
1 lb | pork tenderloin |
1 TBS | olive oil |
1 tsp | salt |
1 tsp | pepper |
2 | garlic cloves, chopped |
1 TBS | minced fresh sage |
1/2 cup | low sodium chicken broth |
2 TBS | cold, unsalted butter, cut into cubes |
Directions:
1) Rinse pork tenderloin with cold water and pat dry with paper towels.
2) Combine oil, salt, pepper, galric and sage in a small bowl; rub paste over tenderloin and set in the Pampered Chef Deep Covered Baker.
3) Cover baker, microwave on HIGH for 10 minutes. Check temperature at 10 minutes and then at every 2 minute intervals or until poket thermometer registers 150F.
4) Remove baker from the microwave; let stand, covered for 10 minutes. Temperature will rise to 160F for medium doneness.
5) Scrap juices and droppings from the deep covered baker into a small sauce pan over medium-high heat. Add broth; cook and stir until sauce has been reduced by half; about 10 minutes. Turn off heat; add butter and swirl pan to melt.
6) Slice tenderloin and serve with sauce.
