Cream of Crab Broccoli Soup

    8 oz  crab
    10 oz pkg  chopped broccoli
    ½ cup  chopped onion
    3 Tbsp  flour
    2 Tbsp  butter
    2 cups  milk
    2 cups  Half & Half
    2  chicken bouillon cubes
    1/2 tsp  salt
    1/8 tsp  pepper
    1/8 tsp  cayenne pepper
    ¼ tsp  thyme

Directions:

Prepare broccoli according to pkg directions.
Drain crab.
Sauté onion in butter.
Blend in flour.
Add milk and Half & Half.
Stir and cook until thickened and smooth.
Dissolve Bouillon in hot soup.
Add seasonings, crab and broccoli.
Heat thoroughly.

TIP: I use lump crabmeat and fresh broccoli. I also adjust seasonings to taste, using the above quantities’ as a starting point.
