Morning Glory Muffins

2 ½ cups | sugar |
4 cups | flour |
4 tsp | cinnamon |
4 tsp | baking soda |
1 tsp | salt |
1 cup | raisins |
1 cup | coconut |
2 | shredded apples |
4 cups | grated carrots |
1 cup | chopped pecans |
6 | eggs |
2 cups | vegetable oil |
1 tsp | vanilla |
Directions:
In large bowl, mix flour, soda, cinnamon and salt.
In another bowl, beat eggs, add oil and vanilla.
Stir into flour mixture until just combined.
Add fruit, nuts and mix.
Spoon into well greased muffin cups.
Bake at 375 for 20 – 25 minutes.
