<RecipeText>Cook &amp; crumble sausage. Drain &amp; set aside. Scramble eggs in 1/4 c. Butter, salt &amp; pepper. Mix sausage, eggs &amp; cheese together. Lay both crusts on large greased pan). Divide egg mixture in half &amp; place on the 2 pie crusts. Fold crusts over making it look like a fried pie. Crimp the edges of the turnover. Make vent holes with a knife. Gentle mash out air pockets. Bake @ 375 until golden brown. Approx. 25-30 minutes. Serve with sour cream &amp; salsa.

I reduce the number of whole eggs &amp; use egg whites. Can add onion &amp; green pepper.
