Brooke's High Fiber Blueberry Muffins

Preheat oven to 400' Start with | |
1 cup | all bran cereal soaked in |
2 cups | milk, soured w |
4 TBSP | lemon juice |
Mix the following, set aside; | |
2 cups | unbleached flour |
1 cup | flax meal |
2 TBSP | baking powder |
1 tsp | salt |
Then mix separately; | |
1/2 cup | Truvia baking blend |
3 | eggs |
1/2 cup | oil |
2 TBSP | lemon zest |
Then add this to the all bran and milk mixture | |
2 cups | blueberries coated in 4 Tbsp flour |
Mix in dry ingredients, and when well incorporated, fold in blueberries. Streusel | |
1/2 stick | butter melted |
1/2 cup | brown sugar |
1 cup | flour |
1 tsp. | Baking soda |
2 tsp | lemon zest |
Mix til crumbly sprinkle on muffins
Bake 15-18 mins
