| 500g | sweet potato |
| 600ml | vegetable stock |
| Pinch | mixed herbs |
| 100g | cottage cheese |

| METHOD | |
| Chop | celery sticks |
Dice onion
Dice sweet potato
Heat celery & onion for 5 mins
Add sweet potato & heat for another 5 mins
Add stock, herbs and cottage cheese, cook for 20-30 mins
Serve with fresh coriander
