Greek Beef and Orzo

1 lb | lean ground beef |
1 can (14 1/2 oz) | stewed tomatoes, undrained |
1 medium | celery stalk |
1/2 c | uncoiled orzo or rosamaria pasta |
1/2 tsp | salt |
1/4 tsp | ground red pepper |
1/2 c | plain low fat yogurt |
1 | green pepper diced |
1 small | onion diced |
2 cloves | garlic minced |
1. Cook beef in 10-inch skillet over medium-high about 6 mins, stirring frequently, until brown; drain.
2. Stir in remaining ingredients except yogurt. Heat to boiling; reduce heat. Cover and simmer about 12 mins, stirring frequently, until liquid is absorbed and pasta is tender. Serve with yogurt.
