    2 1/2 cup  water, lukewarm
    4 tbsp  dry yeast
    1/2 tsp  sugar
    1/2 tsp  salt
    3 tbsp  vegetable oil
    6 cups  flour
    1  egg

Mix the lukewarm water, the yeast, the sugar and 2 tablespoons of oil. Make sure the water temperature is not too high, or the dough will not raise. Let it rest a few minutes.
Sift together the flour and the salt and add the liquid mixture. Mix well and knead the dough on a board about 10 minutes while incorporating some flour as necessary. Make a ball with the dough and oil it with the remaining of the oil. Leave it in a covered bowl to rise to 2 times its size, about 30 minutes to 1 hour.
Punch the dough down, cut it in egg-size pieces, and pat them to the form of an hamburger bun. Brush the buns with the beaten egg and let them rise again for 1 hour.
Preheat the oven to 500ºF (250ºC) and bake them in the lower half of the oven for 10 minutes.
Fill them with falafel and freshly cut vegetables for a delicious meal or dip them in hummous as appetizer.
