Potatoes Scalloped Sweet Potato Stacks

1 1/2 lb | sweet potatoes , peeled, thinly sliced 2 tsp chpd fresh thyme, divided |
1 cup (4 oz) freshly shredded mozarella cheese divided, ( I used all dif kinds- goat, cheddar, jack All taste good) 2/3 cup heavy cream 1 clove garlic | |
1/2 to 3/4 tsp | salt. 1/4 tsp freshly ground pepper |
Layer half sweet potatoes in lightly greased muffin pan. Sprinkle with 1 1/2 tsp thyme and 1/2 cup cheese. Top with remaining sweet potatoes(potatoes will come up above rim of pan)
Microwave cream and next 3 ingredients on High for 1 minute. Pour cream- about 1 T per cup in each cup. Cover with foil and bake for 30 minutes.
Uncover and sprinkle each cup with remaining cheese. Bake until golden brown about 5-7 minutes.
Let stand about 5 minutes and serve
