Steamed Fish

1 1/3 lbs | white fish, i.e. sole, orange roughy |
1 tablespoon | white wine |
1/2 teaspoon | salt |
1/4 cup | shredded green onion |
1 tablespoon | fresh ginger and/or carrot |
black pepper | |
1 teaspoon plus 2 tablespoon | sesame oil |
2 1/2 tablespoons | soy sauce |
fresh cilantro to taste |
Prepare fish then pat dry. Marinate with white wine and salt briefly. Bring water to a boil, steam fish at high about 12 minutes (If fish filet is used, steam 8 minutes). Remove and discard liquid. Sprinkle fish with shredded green onion, ginger and/ or carrots, black pepper and 1 teaspoon sesame oil. Then pour 2 tablespoons of hot boiling oil all over it. Add soy sauce and coriander, serve.
