Steamed Fish

    1 1/3 lbs  white fish, i.e. sole, orange roughy
    1 tablespoon  white wine
    1/2 teaspoon  salt
    1/4 cup  shredded green onion
    1 tablespoon  fresh ginger and/or carrot
      black pepper
    1 teaspoon plus 2 tablespoon  sesame oil
    2 1/2 tablespoons  soy sauce
      fresh cilantro to taste

Prepare fish then pat dry. Marinate with white wine and salt briefly. Bring water to a boil, steam fish at high about 12 minutes (If fish filet is used, steam 8 minutes). Remove and discard liquid. Sprinkle fish with shredded green onion, ginger and/ or carrots, black pepper and 1 teaspoon sesame oil. Then pour 2 tablespoons of hot boiling oil all over it. Add soy sauce and coriander, serve.
