Sole with Lemon Butter

4 fillets | sole |
1/2 teaspoon | salt |
1/4 teaspoon | pepper |
1 teaspoon plus 1/4 cup | lemon juice, divided |
1/4 cup | flour |
1/4 cup | butter, divided |
3 tablespoons | olive oil |
2 tablespoons | capers, rinsed |
parsely & lemon wedges, for garnish | |
Season fillet with salt, pepper and 1 teaspoon lemon juice. Dredge lightly in flour. Heat oil with 2 tablespoon butter until foaming. Add 2 fillets and saute over medium heat for 2-3 minutes on each side. Lift fillets carefuly onto a warm platter. Saute remaining 2 fillets and add to the platter. Remove pan from heat and add remaining lemon juice and 2 tablespoons butter. Return pan to heat and stir until pan juices are sizzling and turn golden brown.Remove from heat and stir in capers. Pour pan juices over Sole, sprinkle with salt and pepper to taste and garnish with parsely. Add lemon wedges and serve immediately. |
