Tzatziki:
    1/2  English Cucumber, peeled seeded and grated
    1/2 cup  plain greek yogurt
    2 tsp  fresh lemon juice
    2 tsp  fresh mint, chopped
    1 clove  garlic, small and minced
      salt
      pepper
Lamb Burgers:
    1 1/2 lbs  ground lamb
    1/2 small  onion, minced
    1/4 cup  fresh parsley, chopped
    2 tsp  fresh oregano, chopped or 1 tsp dried
      salt
      pepper
    4 (6-inch)  pita breads
    2 medium  beefsteak tomatoes, sliced
      Shredded lettuce

Heat grill to high

Make tzatziki
In a med. bowl combine cucumber, yogurt, lemon juice, mint, garlic.
Season with salt and pepper
Cover and refrigerate until ready to use

Make burgers
In a med bowl use a fork to combine the lamb, onion, parsley, and oregano
Season with salt and pepper
Gently from the mixture into 16 small patties, about 3/4 inch thick
Grill until med-rare, 2-3 minutes on each side

To serve, warm pitas on the grill, halve and fill with burgers, tzatziki, and tomatoes. Garnish with lettuce
