    175 gr  Sugar
    175 gr  Glucose
    75 gr  Water
    325 gr  Sugar
    325 gr  Glucose
    125 gr  Water
95 gr Egg Whites w/ 30 gr Water
    90 gr  Honey
    500 gr  Almonds
    125 gr  Pistachios
    125 gr  Hazelnuts

Cook first mix to 122 F-pour over whites-cook second mix to 145 F and pour over whites as well. Dry with torch and then add 90 gr of honey (room temperature) Add warm: almonds, pistachios and hazelnuts.
