Buttermilk Scones

375 gr | a.p. |
1 T. | 1 baking powder |
1 t. | baking soda |
salt | |
85 gr | sugar |
1 | orange, zest and juice |
1/2 t. | nutmeg |
200 gr | butter, frozen and cubed |
80 gr | currants, soaked in orange juice |
1 T | vanilla |
160 gr | buttermilk |
Soak currants in o.j. Mix first 7 ingredients together. Cut in butter and mix until it resembles cornmeal. Slowly incorporate buttermilk and vanilla. Pat out dough and cut with #60 or #70 . Brush with cream and sprinkle with turbinado sugar.
