Tapioca Sabayon

1/3 cup | Small pearl tapioca |
3/4 cup | Water |
2 1/4 cup | Milk |
1/4 t. | Salt |
2 | Eggs, seperated |
1/2 cup | Sugar |
1 | Vanilla bean |
Soak tapioca and water for 30 minutes. Add milk, salt, yolks, vanilla and some of the sugar. Stir over medium heat until almost boiling. Simmer over low heat for 10 minutes or so. Make a meringue with remaining sugar and whites. Fold into mixture.
