Lemon Purée

120g (1⁄2 cup) | water |
120g (1⁄2 cup plus two tablespoons) | granulated sugar |
4g (1 teaspoon) | agar agar |
120g (1⁄2 cup) | lemon juice |
1. Combine water, sugar, and agar agar in a small saucepan. Gently bring to a boil; reduce heat while
maintaining a simmer for two to three minutes.
2. Remove from heat and whisk in lemon juice. Allow to cool and set.
3. Process in blender until smooth.
