Chocolate Sauce for Cafe

3 cups | sugar |
water | |
2 cups | heavy cream |
1/2 cup | simple syrup |
1/4 cup | dark rum |
6 ounces | dark chocolate, (40%) |
6 ounces | milk chocolate, (60%) |
Bring cream, simple syrup & rum to a boil: remove from heat.
Bring sugar and water to a boil: cook to caramel stage: Deglaze with warm cream mixture.
Pour hot caramel over chocolate, combine, strain.
