Truffle-filled Orange Thumbprint Cookies

3/4 cup | butter |
1/2 cup | sugar |
2 | egg yolks |
1 tsp | vanilla |
1 tbs | orange peel |
1 3/4 cups | flour |
1 1/2 tsp | baking powder |
1/4 tsp | salt |
2 tbs | sugar |
FILLING | |
1/2 cup | dark chocolate chips |
2 tbs | whipping cream |
1 tbs | butter |
1 tsp | light corn syrup |
1. Heat oven to 350. Lightly grease 2 large cookie sheets.
2. In a large bowl, beat 3/4 cup butter on medium speed until fluffy. Beat in 1/2 cup sugar, egg yolks, vanilla, and orange peel until light and fluffy. In a medium bowl, mix flour, baking powder, and salt. Beat into butter mixture on low speed.
3. Shape dough into 1 1/4" balls. Dip top of each ball in sugar. Place 2" apart on cookie sheet and make large indentation with your thumb or the end of a spoon.
4. Bake 12-14 minutes. If necessary, make another indentation.
5. Microwave chocolate chips, cream, and 1 tbs butter, uncovered on high for 40 seconds; stir. Continue heating and stirring 15 seconds at a time until smooth. Stir in corn syrup. Spoon into cookie indentations.
