Quince, Orange and Cardamom Jam

800 gr | quince, sliced |
200 gr | quince juice |
850 gr | sugar |
100 gr | sugar |
2 | oranges, sliced very thinly |
1 | lemon, juiced |
2 | oranges, juiced |
1/8 teaspoon | ground cardamom |
Poach orange slices with 100 gr sugar and orange juice until rounds are translucent. Add the quince slices and juice, lemon juice 850 gr sugar and cardamom.Bring to a simmer. Pour into a bowl, covered, refrigerate overnight. Bring to boil, skim and cook for 10 minutes.Check the set and jar when ready.
