Quince Filling for Apple Tart

6 cups | sugar |
12 | quince, peeled, cored and chopped in eighths |
2 | vanilla beans |
2 | lemons |
Combine everything except quince. Bring to boil and add quince. Cover with parchment paper. Cook until soft. Puree. Strain liquid and reduce for sauce.
