    18 cups  water
    6 cups  sugar
    12   quince, peeled, cored and chopped in eighths
    2  vanilla beans
    2  lemons

Combine everything except quince. Bring to boil and add quince. Cover with parchment paper. Cook until soft. Puree. Strain liquid and reduce for sauce.
