Melon Jam

2000 gr | melon |
500 gr-800 gr sugar 2 lemons juiced | |
2 | vanilla beans |
200 gr | apple jelly |
1 | lemon |
1 | orange |
1 pinch | salt |
Dice fruit. Macerate with sugar and vanills.
Bring to simmer and sit in fridge overnight.
Blanch orange and lemon zest. Julienne.
Strain fruit. Bring juice to a boil and bring to 240 F. Add apple jelly other vanilla bean, peel and melon. Bring to a boil for 10 minutes. Skim, remove beans and save for decor. Return to boil. Check set.
