Green Apple Jelly

1500 gr | green apple, quartered and not peeled |
1000 gr | sugar |
1500 gr | water |
1 | lemon |
Cover apples with water, bring to a boil, simmer for 30 minutes. Strain the contents of pot through a chinois, preessing lightly on fruit. Strain through chinois once more. Pour 1000 gr of the juice into pot with sugar and juice. Bring to a boil, skim and cook on high for 5-10 minutes. Skim again. Return to boil. Check the set.
