    140 Gr  Milk
    150gr  Water, 1250 F
    20 Gr  Honey
    42 Gr  Fresh Yeast
    380 gr  "00" flour
    55 Gr  AP. Flour
    5 Gr  Sea Salt
    approximately 200 gr  each. Roll out to 2 on sheeter

Combine water and yeast. Whisk. Add milk. Put in bowl with dough hook. Add all dry ingredients
except for the salt. Mix on 1 for about 6 minutes. Add salt, mix two more minutes. Place in well
