42 Gr | Fresh Yeast |
380 gr | "00" flour |
55 Gr | AP. Flour |

Combine water and yeast. Whisk. Add milk. Put in bowl with dough hook. Add all dry ingredients
except for the salt. Mix on 1 for about 6 minutes. Add salt, mix two more minutes. Place in well
oiled bowl, cover and let rest for 1 - 2 hours or until doubled in size. Weigh out balls to
