8 Lb | 80z Bread Flour |
1 Lb | Sugar |
4 Oz | Milk Powder |
9 Oz | Yeast |
4 Lb | Water |
41 Oz | Eggs |
1 Lb | Oil |
1 Lb | Garlic Puree |
2 Oz | Salt |
Large mixer. Add wet into dry (except salt) 8 minutes on 1. Add salt. Mix 6 minutes on 3 or until dough leaves the sides of the bowl. Do not overmix!!! Scale each ball into 1200gr for Rondo cutter. Around 20 gr each. After bread is proofed and before baking, spinkle bread with flour and score with blade. bake at around 450 degrees farenheight.
