170gr | Yeast |
800gr | Cold Water |
300gr | Olive Oil |
50gr | Salt |
Dissolve yeast in water - Put in oil - Add flour - Mix on slow speed 8 minutes - may need a sprinkle more water, should be smooth but tough - Add salt - Mix on low for two minutes - Divide into 3 pieces - Let rest - Sheet out to #3 - Cut into long thin strips - Let proof - Bake at high temp for 5 min - Let dry out in low oven for several more minutes.
