2 pounds | Butter, Cubed |
6 ounces | Salt |
1 Lg | Can Salted Peanuts |
Caramelize sugar slowly. Cook until melted and just before smoking. Take off heat and add butter bit by bit until combined.Stir in the salt and peanuts. Immediatley pour out onto 3-4 silpats and roll very, very thin. Coat with pate a glace and chopped peanuts. Break up and store in airtight container.
