1 1/2 T | lemon juice |
2 T | olive oil |
1/2 T | garlic |
1 T | fresh ginger, minced |
1 T | garam masala |
1/2 t | cinnamon |
1/4 t | black pepper |
1 t | salt |
4 c | baby spinach |
1/4 c | red bell pepper, diced |
3 T | chives, minced |
In a high speed blender, blend the pine nuts, lemon juice, olive oil, garlic, ginger,garam masala, cinnamon, pepper, and salt until smooth. Mix in the baby spinach, diced bell pepper, and chives by hand. You can warm the mixture slightly on the stove.
