7000 gr | milk |
8 | cinnamon sticks |
1 teaspoon | whole cloves |
1/2 teaspoon | ground nutmeg |
200 gr | milk powder |
1000 gr | light brown sugar |
800 gr | sugar |
50 gr | stabilizer |
50 | yolks |
6 cans | sweetened condensed milk |
1 liter | heavy cream |
300 gr | dextrose |
1 Tablespoon | salt |
1. Steep milk and spices for 1 hour.
2. Strain through chinois.
3. Buzz milk, sugar and milk powder.
4. Temper yolks, sugar and stabalizer with milk.
5. Heat th 85 c, cool to 65 c.
6. Add cream, dextrose, salt and condensed milk.
7. Cool to 4 c.
