Lime Frozen Yogurt

10 cups | milk |
14 | limes, zest |
4000 gr | yogurt |
1400 gr | sugar |
200 gr | dextrose |
100 gr | glucose |
20 gr | stabilizer |
1. Bring milk to simmer
2. Remove from heat and stir in lime zest.
3. Infuse milk 1-2 hours.
4. Burr mix in yogurt, sugar, dextrose, glucose and stabilizer.
5. Turn.
