200 Gr | Milk |
450 | Sugar |
150 Gr | Glucose Atomise |
12 Gr | Stabalizer |
4 Orange Juice And Zest
Heat the cream and milk together. Cook the cranberries until soft. Combine sugar, glucose
atomise and stabilizer. Heat to 87C in milk/cream mixture.
Puree and strain the cranberries. Add to milk/cream mixture.
