2000 gr | Water |
400 gr | Dry Glucose |
1400 gr | Sugar |
150 gr | Trimoline |
150 gr | Lime Juice |
400 gr | Olive Oil |
10 gr | Stabalizer |
Make a syrup with water, sugar, dry glucose, trimoline and stabalizer. Cook only to 84 C. Let cool down to 50 C and add lime juice. Emulsify olive oil slowly. Spin right away.
