Golden Raisin Rosemary Muffins

Golden Raisin Rosemary Muffins | |
3/4 cups | milk |
1/2 cup | golden raisins |
1 tsp. | dried rosemary leaves |
1/4 cup (1/2 stick) | butter |
1 1/2 cups | all purpose flour |
1/2 cup | granulated sugar |
2 tsp. | baking powder |
1/4 tsp. | salt |
1 large | egg |
Simmer milk, raisins and rosemary for 2 minutes in a small saucepan. Remove from heat, add butter and stir until melted. Let cool. (Placing the saucepan in a small bowl of cold water will cool the contents quickly in 3 or 4 minutes).
Heat oven to 350. Grease muffin cups.
Mix flour, sugar, baking powder and salt in a large bowl.
Whisk egg into milk mixture. Pour over dry ingredients and fold in with a rubber spatula just until dry ingredients are moistened.
Scoop batter into muffin cups. Bake about 20 minutes, or until browned and springy in the center. Turn out of pan and serve hot; or cool on a rack.
