Garden Vegetable Soup

1 | head cabbage, diced |
1 tsp. | garlic powder, to taste |
1 pkg. | carrot, diced |
2 cans | green beans |
1 pkg. or can | spinach |
2 cans | wax beans |
1 bunch | scallions, just green part |
1 tbsp. | tomato paste canned |
2 cans | tomato diced canned |
1 can | tomato juice, large |
3 cans | chicken bouillon cubes, large-fat free |
1 tsp. | dried oregano, to taste |
1 tsp. | dried basil, to taste |
1 tsp. | dried herb blend, to taste (Ital. Seasoning) |
1 | eggplant, diced |
2 | zucchini, diced |
1 pkg. | mushrooms, diced |
*Prepare all washed and diced ingredients and place together in large pot.
*Simmer for about 2 hours or until all vegetables have softened.
