Pound Cake with Cream Cheese Icing

POUND | CAKE RECIPE |
3 large or 4 small | eggs |
1 cup | Crisco |
2 cups | sugar |
1 cup | buttermilk |
1/2 teaspoon | soda |
1/4 teaspoon | salt |
3 cups | flour |
1 tablespoon | lemon extract |
Combine sugar and Crisco. Add eggs one at a time. Add buttermilk, soda and salt. Beat well by hand. Stir in flour and add lemon extract last. Bake in greased and floured tube pan or bake in layers. Bake at 350 for 1 hour in tube pan or approx. 25 min. in layers. Do not open oven door during baking. CREAM CHEESE ICING | |
1 (8 ounce) | cream cheese |
1 stick | margarine |
1 box | powdered sugar |
1 teaspoon | vanilla |
Combine cream cheese and margarine. Stir in powdered sugar. Add vanilla. Place in refrigerator for 20 to 30 minutes to make it thicker.
