Croissant Bread and Butter Pudding

175g / 6oz | Sugar |
85ml/3 fl oz | rum |
250ml/9fl oz | cream |
250mi/9fl oz milk | |
Fresh or frozen berries,, (fresh in season) | |
raisins, alternative |
Vanilla ice cream or freshly whipped cream to serve.
Serves 4.
Preheat over to 300F
Cut the croissants into small bite size pieces. Place in suitable dish.
Beat the eggs, sugar and rum together until smooth. Then add the cream and milk and mix gently again.
Sprinkle the berries on top of the croissants. Then add the sauce (for best results leave to soak overnight in fridge)
Bake in oven for 30 – 35 mins or until set. Leave to cool for 5 mins.
Serve with vanilla ice cream or freshly shipped cream on the side.
