Spinach and Cabbage Breakfast Pie

8 large | eggs, $1.20 |
10 ounces | frozen spinach, thawed and drained, $1.00 |
1 cup | thinly sliced red cabbage, $0.20 |
1/3 cup nonfat feta cheese -$1.08 | |
1 tsp | vegetable oil, $0.01 |
Directions:
Preheat oven to 350 degrees F and grease a pie dish with vegetable oil.
In a large mixing bowl, combine all ingredients but vegetable oil. Transfer mixture to pie dish and bake for 30-35 minutes in preheated oven, or until eggs are set.
Best served with toast and jack dan- er, dannon yogurt.
Makes approximately 4 servings.
