    8 large  eggs, $1.20
    10 ounces  frozen spinach, thawed and drained, $1.00
    1 cup  thinly sliced red cabbage, $0.20
1/3 cup nonfat feta cheese -$1.08
    1 tsp  vegetable oil, $0.01

Directions:

Preheat oven to 350 degrees F and grease a pie dish with vegetable oil.
In a large mixing bowl, combine all ingredients but vegetable oil. Transfer mixture to pie dish and bake for 30-35 minutes in preheated oven, or until eggs are set.
Best served with toast and jack dan- er, dannon yogurt.
Makes approximately 4 servings.
