Karie's Cheddar tortilla soup

Tortilla chips | |
2 Tbs. | oil |
4 cloves | garlic, minced |
6 cups | chicken broth |
4 tsp. | cumin |
6 | plum tomatoes, diced |
1 cup | tomato sauce |
1/2 cup | green onions, chopped |
1 cup | onion, chopped |
4 to 5 | chicken breasts, 1/4 inch pieces |
1 tsp. | cayenne pepper |
Toppings: Fresh chopped cilantro | |
Shredded cheddar cheese |
Sauté onion and garlic in Tbs. olive oil. Add chicken and brown. Stir in cumin and cayenne pepper. Cook 1 minute. Add broth to boil and reduce heat. Simmer 20 minutes. Put crushed chips in bowl and pour soup over chips. Top with chopped cilantro and green onions. Makes enough for 4 people.
