4-6 cups | coconut milk |
1/2 cup | glutinous rice flour (michiko brand) |
1 tablespoon | tapioca |
1/2 cup | ube, diced |
1/2 cup | sweet potato, diced |
1/2 cup | plantain, sliced |
1/2 cup | jackfruit (lanka), canned, sliced in strips |
1/2 - 1 cup | sugar, (to taste) |
Add enough water (about 3 Tbs) to rice flour (michiko brand) to make a dough. Take 1 teaspoonful of dough and roll into a ball. Do this for the rest of the dough. Boil balls in water until done. Boil coconut milk and then add tapoica and ube. Cook until half done (approx. 7-8 minutes). Add cooked michiko balls, sweet potato, plantain and lanka. Blend in sugar to taste. Cook until done, (approx. 10-15 minutes). Stir occationally. Add water or more coconut milk if consistency is too thick to your liking. Omit ingredients that are unavailable in your area, i.e. ube. |
