Grilled Veggie Wrap

1 | red bell pepper, cut into 1/2 in strips (1cup) |
1 | zucchini, cut into 3/4in thick rounds (1cup) |
1 tbs | olive oil |
1/2 c | white beans |
1 | garlic clove, minced |
1/2 tsp | chile sauce |
2 | tortilla shells |
1 bunch | basil, 8 leaves |
1 | red onion, 8 thin slices |
1 c | arugula |
1 | asparagus, 12 thin spears |
Prehat grill. Toss asparagus, bell pepper, zucchini, and oil on baking sheet. Season with salt and pepper. Grill or broil veggies 4-6 mins per side, turning once.
Mash together beans, garlic, and chile sauce in small bowl until smooth.
Spread half of bean mixture onto tortilla. Top each with 3 basil leaves, 1/2 c roasted veggies, 4 onion slices, and 1/2 c arugula. Fold bottom of shell over veggies and roll up tightly tucking in sides. Cut in haf and serve immediately or wrap in foil and chill until ready
