Goat Cheese and Zucchini Frittata

| 8 | eggs |
| 3 tbsp. | olive oil |
| 1 | red onion, cut into thin slices |
| 2 | zucchini, thinly sliced |
| 4 oz | goat cheese |
| 4 | roasted red pepper |
| 3 tbsp. | fresh parsley |
| 3 tbsp. | fresh chives |
Beat eggs and add salt and pepper to taste
Cook onion and zucchini in oil for ~ 3min
Add eggs and cook 1-2 min unitl ALMOST set
Dot with cheese and peppers and sprinkle with herbs
Broil 2-3min until golden brown
