Artichoke & New Potato Packets with Pesto

8 oz | new potatoes, thinly sliced |
1/2 c | vegetable broth |
12 oz | pkg frozen artichoke hearts, thawed (2c) |
2 c | fresh or thawed frozen baby peas |
2 medium | leeks, white and green parts chopped |
3 tbs | prepared pesto |
3 tbs | romano cheese, grated |
1/2 c | basil, chopped |
Preheat oven to 400. Place 4 16-in lengths of foil on surface area. Fold foil in half from short side. Unfold. Shape corners & edges of one half into semicircular bowl with 1/2in sides. Coat inside of foil with cooking spray.
Arrange overlapping sides of potatoes in oval shapr over bottom of each packet. Season with salt and pepper and drizzle with 2 tbs of broth.
Combine artichokes, peas, leeks, and pesto in medium bowl. Divide mixture among packets. Fold over other half of foil over ingredients, and seal edges in overlapping folds untiil packets are sealed. Transfer to baking sheet. Baek 25-30 mins
Transfer packets to plates and open carefully steam will be hot. Sprinkle with romano cheese and basil
