Egg Muffin with Roasted Red Peppers & Spinach

18 | egg whites |
9 tbsp | nonfat cottage cheese |
2 tsp | chili powder |
6 tsp | green salsa |
3 cups | spinach leaves |
1-1/2 tsp | Mrs. Dash Fiesta lime seasoning |
1 cup. roasted red peppers
Preheat oven to 350. In medium bowl, combine eggwhites, cottage cheese, seasonsing and salsa, stir and set aside. Chop spinach and peppers. Coat muffin tray with cooking spray. Pour even amounts of egg mixture into each cup. Sprinkle even amounts of spinach and peppers into each cup and stir gently so veggies are coated. Bake for approx 20 mins or until eggs are firm to touch.
