Yellow Rice with Onions and Cheese

4 tablespoons | butter |
1 small | onion, chopped |
1 cup | rice |
2 cups | chicken broth |
¼ teaspoon | turmeric |
salt and pepper to taste | |
4 tablespoons | Romano cheese, grated |
1 teaspoon | lemon peel, grated |
1 tablespoon | butter, melted |
Sauté onion in butter until onion is soft. Add rice and sauté for 2 minutes, stirring constantly. Carefully add broth and seasonings. Stir and cover pan; simmer rice for about 30 minutes or until rice is tender and liquid is absorbed. Stir in cheese, lemon peel, and butter. Toss to blend.
Serves 6.
