CORN - Shoepeg Corn Casserole :]>

2 tablespoons | onions. chopped |
2 tablespoon | butter, melted |
2 tablespoons | flour all purpose |
1 8 ounce sour ceam | |
3 12 oz cans | shoe peg com, drain 1 can |
1/4 teaspoon | salt |
6 slices | bacon, cooked, crumbled, divided |
Saute onions in butter in a large skillet until tender. Stir in
flour and cook 1 minute over low heat, stirring constantly. Gradually stir in sour cream, corn, and salt, cook over medium low heat, stirnng constantly until thoroughly heated (Do not boil). Stir in half the bacon pour com mixture into a greased shallow 2 quart casserole. Sprinkle remaining bacon over top Bake at 350 degrees for 25 to 30 minutes. Yield 8 servings
