Tossed Salad with Mandarin Oranges

Dressing | |
¼ cup | oil |
2 tablespoons | tarragon vinegar |
½ to 1 teaspoon | salt |
¼ teaspoon | tabasco |
2 tablespoons | sugar |
pepper to taste, freshly ground | |
Salad | |
1 | head lettuce |
1 cup | celery, coarsely chopped |
2 to 4 | green onions, with stems, chopped |
¼ cup | blanched almond slivers, toasted* |
1 tablespoon | parsley, minced |
1 11-ounce can | mandarin oranges, drained |
1 | avocado, diced |
Dressing: Mix dressing ingredients well. May be made ahead of time and chill.
Salad Break lettuce into pieces. Toss lightly with other ingredients and dressing. Serve at once. For a variation, used a mixture of different kinds of lettuce.
Serves 6-8.
*To toast almonds, bake in oven at 400?F for 10 minutes.
