Dressing
    ¼ cup  oil
    2 tablespoons  tarragon vinegar
    ½ to 1 teaspoon  salt
    ¼ teaspoon  tabasco
    2 tablespoons  sugar
      pepper to taste, freshly ground
Salad
    1   head lettuce
    1 cup  celery, coarsely chopped
    2 to 4  green onions, with stems, chopped
    ¼ cup  blanched almond slivers, toasted*
    1 tablespoon  parsley, minced
    1 11-ounce can  mandarin oranges, drained
    1  avocado, diced


Dressing: Mix dressing ingredients well. May be made ahead of time and chill.

Salad Break lettuce into pieces. Toss lightly with other ingredients and dressing. Serve at once. For a variation, used a mixture of different kinds of lettuce.

Serves 6-8.

*To toast almonds, bake in oven at 400?F for 10 minutes.
