First I begin by cutting up my veggies. This recipe is pretty versatile; you can use a large variety of veggies. There are no certain veggies you have to have. For this meal I used:
1 small | onion, chopped |
1 | carrot, chopped |
3 red mini peppers, sliced
a small wedge | red cabbage, chopped |
a small wedge | green cabbage, chopped |
1 | celery stalk, chopped |
6 | mushrooms, sliced |
After I chopped the veggies up I added the spaghetti to a pot of boiling water.
10oz | whole wheat spaghetti noodles |
While the water was coming to a boil I heated my large cast iron frying pan and then added some olive oil to it (enough to coat the bottom of the pan). Then I added my veggies…. By the time the noodles were done cooking the veggies had finished cooking… To the veggies, I added the cooked noodles and then:
¼ cup | soy sauce |
1 tablespoon | fish sauce |
½ teaspoon | red pepper flakes |
You could also add meat to this to make it a main dish; chicken, beef, shrimp, pork would all work well. You would cut up the meat into bite size pieces and cook it at the same time you were cooking the veggies.
