Glazed Pear Muffins

Ingredients:
    2 large  pears
    1/2 tsp  ground cinnamon
    1/3 c  white sugar
    1 tsp  lemon juice
    1/2 c  sour cream
    1 large  egg
    1 tsp  vanilla
    1/3 c  fat free milk
    2 c  flour
    1 tsp  baking powder
    1 tsp  baking soda
    1/2 tsp  salt
    1/2 c  powdered sugar
    1/4 tsp  ground ginger
    1/4 tsp  vanilla
    1 Tbsp  water

Directions:
1). Preheat oven to 375 and line a 12 hole muffin tin.
2). Core and chop pears into tiny cubes. In a medium bowl mix pears, cinnamon, ground sugar, and lemon juice. Stir and set aside.
3). In a small bowl mix sour cream, egg, 1 tsp vanilla, and milk.
4). In a large bowl sift together flour, baking powder, baking soda, and salt.
5). Make a well in the dry ingredients. Pour the sour cream mixture and the fruit mixture into the well alternating in small batches, mix until barely blended - DO NOT over beat, it will be thick.
6). Fill the tins to the top of the muffin liner. Bake 30-35 minutes. While baking see step 7.
7). Prepare the glaze - mix 1/2 c powdered sugar, 1/4 tsp ginger, 1/4 tsp vanilla, and 1Tbsp war water (add more water if the glaze appears to be too thick).
8). When the muffin finish baking cool them in the pan for 5 minutes. Dip each warm muffin in the glaze and transfer to a wire rack to finish cooling.
